Pumpkin Raisin Muffins

Ingredients

  • 1 can Farmer's Market Foods Organic Pumpkin
  • 3 1/2 cup flour
  • 1 cup sugar
  • 2 eggs
  • 1 1/4 cup milk
  • 1/4 cup softened butter
  • 1 cup raisins
  • 4 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 cup oats

Instructions

  • Preheat oven to 400 F. Put muffin cups into muffin tins.
  • Cream butter and sugar together until fluffy. Beat in the pumpkin and eggs. 
  • Sift remaining dry ingredients (except for oats) into the bowl, and slowly add milk; stirring with your hands until just incorporated.
  • Dredge raisins in 1/2 cup of flour, and stir in raisins.
  • Spoon mixture into paper cups in muffin tin, and sprinkle oats over top each muffin. Bake for 20-25 minutes, let cool, and serve.
