Pumpkin Oat Balls

These yummy Pumpkin Oat Balls take less than 1 hour to make, and they are delicious! These make a perfect quick and easy snack to grab when you are in a hurry.

Equipment

  • 1 large mixing bowl
  • 1 small cookie scoop about 1 tablespoon
  • 1 Plate or Tray for chilling

Ingredients

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder this step is optional
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup Farmers Market Pumkin Puree
  • 1/3 cup maple syrup
  • 1/3 cup chocolate chips

Instructions

  • In a large mixing bowl, combine the oats, protein powder, and pumpkin pie spice until evenly combined.
  • Add Farmers Market Pumpkin Puree and maple syrup to the bowl. Stir thoroughly until well combined. You want the mixture to be thick and sticky.
  • Add the chocolate chips to the bowl and mix together.
  • Using a small cookie scoop gather one ball and roll it between your hand for the best shape possible.
  • Place the ball on the tray lined in parchment paper, make sure the balls aren't touching. Refrigerate for about 25 minutes so that the balls can firm.
  • Remove the pumpkin balls from the fridge and enjoy!
