Pumpkin Black Bean Soup

Ingredients

  • 1 Yellow onion diced
  • 1 cup Vegetable broth divided
  • 1 tsp Curry powder
  • 1 tsp Cumin
  • 2 tsp Sea salt
  • 1/4 tsp Cayenne
  • 10 turns Black pepper
  • 2 cans Farmer's Market Organic Pumpkin Puree
  • 1 can Black beans
  • 1 can Coconut Milk
  • 1 can Fire-roasted diced tomatoes
  • Pepitas and chives for topping optional

Instructions

  • Sauté onions with ½ a cup of vegetable broth until tender on medium heat, stirring often - about 10 minutes. Add more broth as necessary to prevent the pan from burning.
  • Add spices and stir to coat the onions.
  • Add in pumpkin puree, black beans, coconut milk, and diced tomatoes. Stir to incorporate.
  • Add second 1/2 cup of vegetable broth. Add to reach your desired consistency.
  • Store together and gently heat until boiling. Turn off heat.
  • Top with pepitas, chopped chives, and enjoy.
