Pumpkin Chocolate Chunk Cookies

Ingredients

  • 1 15 oz. can Farmer’s Market Pumpkin
  • 1 cup shortening
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon nutmeg
  • 1 1/4 teaspoon cinnamon
  • 1 cup chocolate chips

Instructions

  • Cream shortening and sugars. Add egg, pumpkin, and vanilla. Sift and add dry ingredients. Fold in chocolate chips.
  • Bake in 350º oven for 14 to 15 minutes

Notes

Chef’s tip: For a crunchier cookie, use 1 cup of pumpkin instead of the whole can.
