Instructions
- Sauté onions with ½ a cup of vegetable broth until tender on medium heat, stirring often – about 10 minutes. Add more broth as necessary to prevent the pan from burning.
- Add spices and stir to coat the onions.
- Add in pumpkin puree, black beans, coconut milk, and diced tomatoes. Stir to incorporate.
- Add second 1/2 cup of vegetable broth. Add to reach your desired consistency.
- Store together and gently heat until boiling. Turn off heat.
- Top with pepitas, chopped chives, and enjoy.
