Pumpkin Oatmeal Muffins

These muffins are sweet, spicy, and will keep the spirit of fall alive all year long! Packed with pumpkin, spices, and chocolate chips, this recipe is sure to become a favorite!


Ingredients

  • 1 cup Farmer’s Market Foods Pumpkin Puree
  • 1 cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup flour
  • 2 cups oats
  • 1 tsp ground nutmeg
  • 1 tsp cinnamon
  • 1 pinch salt
  • 2 tsp baking powder
  • 3/4 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 350 F, and prepare the muffin tin with liners or a non-stick cooking spray. 
  • In a large bowl, mix together the pumpkin puree, brown sugar, egg, and vanilla extract. 
  • In a separate bowl, mix together the flour, oats, spices, salt, and baking powder. 
  • Combine the two mixtures in one bowl, and fold in the chocolate chips. 
  • Fill 3/4 of each muffin tin with mixture, and bake for 20-23 minutes until cooked through. 
  • Let cool for 20 minutes before removing to serve.
