Pumpkin Cookies

Ingredients

Cookies

  • 1 can Farmer’s Market Foods Organic Pumpkin
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 cup butter softened
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla

Icing

  • 2 cups powdered sugar
  • 3 tbsp milk
  • 2 tbsp melted butter
  • 1 tsp vanilla

Instructions

Cookies

  • Mix all cookie ingredients together with an electric mixer. You can separate the dry and wet ingredients, if you wish. 
  • Drop heaping tablespoons onto a greased cookie sheet, and bake in a 350 F oven for about 17 minutes, until lightly browned. Let cool completely before icing. 

Icing

  • In a small bowl, combine all icing ingredients and blend until smooth. Drizzle over cookies, when cookies are completely cool.
