Pumpkin Cheesecake Cupcakes

  • Preheat oven to 325 F. 
  • Cream together sugar and cream cheese until fluffy, scraping the bowl often. 
  • Next, add pumpkin and then eggs one at a time, making sure to scrape the bowl after each addition. 
  • When eggs are fully incorporated, add the rum and flour and mix well. 
  • Place papers in a standard cupcake pan and place one cookie in the bottom of each paper. Fill with cheesecake mixture, and bake for 30-40 minutes until fluffy but not fully set. 
  • Let cool, and enjoy!
