Instructions
- Preheat oven to 325 F.
- Cream together sugar and cream cheese until fluffy, scraping the bowl often.
- Next, add pumpkin and then eggs one at a time, making sure to scrape the bowl after each addition.
- When eggs are fully incorporated, add the rum and flour and mix well.
- Place papers in a standard cupcake pan and place one cookie in the bottom of each paper. Fill with cheesecake mixture, and bake for 30-40 minutes until fluffy but not fully set.
- Let cool, and enjoy!
