This recipe was the second favorite at the 2012 Pumpkin Tasting in the office. The recipe by Farmer’s Market Employee, Amy Smoker, won second place. A strong cinnamon and spice flavor makes these little poppers the epitome of holiday fun!
Instructions
- Preheat oven to 350 degrees. Combine flour, baking soda, baking powder, salt and all spices in a bowl. Whisk to combine.
- In a separate bowl, mix oil, brown sugar, eggs, vanilla, pumpkin and milk. Pour flour mixture into wet mixture until combined. Fill mini muffin tins until almost full. Bake for 10-12 minutes.
- After poppers have cooled a few minutes, melt 1 tablespoon of butter and dip in butter and roll around in cinnamon sugar mixture.
