Pumpkin Squares

Ingredients

  • 1 can Farmer’s Market Foods Organic Pumpkin
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 4 egg whites
  • 1 egg
  • 1 1/2 cup sugar
  • 2/3 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350 F. 
  • In a large bowl, sift together flour, salt, baking powder, baking soda, cinnamon, and nutmeg. 
  • In another large bowl, beat together eggs, pumpkin, sugar, applesauce, oil, and vanilla. Gradually add the flour mixture to the pumpkin mixture; beat well. 
  • Pour batter into a baking dish that has been coated with nonstick vegetable spray. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean. 
  • Cool completely, and serve.
