Instructions
- Preheat oven to 350 F.
- In a large mixing bowl, cream together the cream cheese and sugar until light and fluffy.
- Beat in the sweet potato and eggs. Stir in the biscuit mix, cinnamon, nutmeg, and cranberries until just blended.
- Turn into a 9x5x3″ loaf pan coated with nonstick cooking spray. Bake for 45 minutes to 1 hour, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 15 minutes, and serve.
